Under general supervision, cooks and prepares food on a large scale to meet menus requirements for regular and therapeutic diet feedings, assumes sanitary and safety assurance responsibility for the units of cookery to which assigned.Cooks meats, vegetables and prepares other foods and beverages as determined by menus, including therapeutic diet menus; prepares dessert types of food items utilizing mixes and convenience food products; determines amount of food to be prepared and plans food production to coordinate with meal serving hours. Keeps record of food temps and food substitutions as required by Dept of Public Aid. Operates standard cooking equipment such as mixers, choppers, steamers, ovens grills, ranges, blenders and fryers; inspects and performs minor maintenance repairs or adjustments to equipment.
Requires knowledge, skill and mental development equivalent to completion of High School supplemented by six months performing support service in the dietary field. Requires working knowledge of routine tasks commonly found in dietary functions. Requires skill in the basic operation of machinery and equipment found in the dietary area.
