Responsible for the overall strategic direction of the Food & Beverage division, encompassing a combination of high volume and gourmet dining outlets, lounges, wine and beverage, catering and banquets, in-room dining, kitchens, stewarding, and any other food & beverage related areas, as well as collaborating with partner venues.
Serves as an important member of both the Operating Committee and Service Assurance Committee.
Provides overall leadership to the Food & Beverage division of approximately 3,000 employees.
Develops and recommends budgets, marketing plans & objectives, and ensures management meets property and division performance goals.
Establishes guidelines for proper staffing to maximize efficiency and minimize labor costs, while supporting commitment to service excellence.
Creates a work environment that promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction.
Oversees the development, interpretation and implementation of all directives, training programs, menus, and work schedules.
Ensures the accountability and compliance of Company and division policies and procedures, collective bargaining agreements, and all local, state, and federal legal requirements.
Directs the development, execution, and measurement of guest service within the Food & Beverage division to ensure consistency with luxury service standards, as well as AAA Five Diamond and Forbes Five Star expectations.
Develops new service techniques designed to maximize guest satisfaction while minimizing operating costs.
Implements solid procedures designed to ensure timely and appropriate resolution for constructive guest feedback.
Collaborates with other divisions to promote guest service excellence.
Develops and implements a business plan for the Food & Beverage division that is aligned with overall strategic direction.
Establishes a culture of integrity, teamwork, and respect to ensure the long-term continued growth and profitability of the Food & Beverage division.
Directs the research, development, evaluation, and implementation of new products, services, promotions, technology, processes, and concepts for new and existing venues which contribute to competitive position.
Develops solid relationships with business partners to ensure their product aligns with standards and maximizes profitability.
Provides oversight in the development and monitoring of financial budgets, sales and marketing strategies, and operations to produce both short-term and long-term profitability.
Develops cost proposals for equipment, systems, and procedural changes as required.
Directs Food & Beverage management to ensure solid business practices that produce quality results, remain within budgetary constraints, and meet targeted deadlines.
Directs the selection and purchasing, as well as usage of related Food & Beverage inventory, supplies, and equipment.
Works closely with the Southern Nevada Health District to ensure the highest standards are maintained in Food & Beverage areas.

At least 10 years of progressive Food & Beverage management experience, including a minimum of 5 years senior leadership experience within a high volume, fast paced, major luxury brand hotel, restaurant group, casino, or resort.
Expertise in leading a progressive multi-food & beverage operation, including high volume and gourmet dining outlets, lounges, wine and beverage, catering and banquets, in-room dining, kitchens, stewarding, as well as familiarity with warehouse and distribution operations.
Aptitude to provide leadership and strategic direction to ensure success of the division and strategic priorities by outlining a vision for the future, positively influencing people and events, encouraging innovation and creativity, leading change, engaging, developing and mentoring staff, and building an environment for continuous improvement.
Ability to achieve business goals and objectives by managing resources, anticipating and identifying changing priorities and issues, implementing strategic and operational plans, budgets and best practices, and monitoring and evaluating results.
Ability to manage budgets and forecasts, including cost controls, capital expenditures, purchasing, and sourcing.
Aptitude to implement a branding strategy throughout all Food & Beverage outlets, including the capability to develop new concepts and review designs.
Ability to ensure compliance with the Southern Nevada Health District standards, as well as ARIA health and safety guidelines.
Must have excellent organizational, interpersonal, and administrative skills to function in a fast-paced, dynamic environment.
Able to analyze quantitative and qualitative information to identify and assess patterns, trends, underlying issues, and relationships to make successful decisions in support of business objectives.

Experience managing employees under a collective bargaining agreement.
