Kitchen Supervisor Jobs description

Kitchen supervisors control and supervise the running of the kitchen, ensuring that the preparation and presentation of food meets the required standards. Under executive direction, kitchen supervisors: oversee food preparation activities in the kitchen that involve planning, production, and delivery of food; complete purchase requisitions and order certain food items; prepare a variety of reports for various food service programs; and supervise and evaluate employees.

Typical duties of a kitchen supervisor are: training, evaluating, and supervising employees; reviewing menus and meal counts and determining that the necessary food items, equipment, utensils, and staffing requirements are met; inspecting food production methods; ensuring that proper sanitary principles and safety rules and practices are being observed; authorizing usage of various food products; ensuring that proper record keeping procedures are followed, and that central kitchen timesheets, absence reports, and supporting documents are completed accurately in a timely manner; and coordinating the testing and standardization of recipes.

Ideal kitchen supervisor candidates will have: prior paid supervisory experience in the preparation and serving of large quantities of food; knowledge of supervisory principles and practices, including staff evaluation techniques, principles of quantity food preparation and nutrition, procedures followed in ordering, receiving, and storing foods, food terminology, markets, and commodities; the ability to estimate food item needs and quantities and make accurate mathematical calculations; the ability to gather, analyze, and evaluate data and operate standard office equipment and food service/utensils; the ability to write and speak concisely and make effective written and oral reports.
